Easy Chicken Broccoli Casserole

"Most of the chicken broccoli casseroles I've seen here all have mayonaisse. Ick! This recipe uses a mixture of three different soups instead for it's creamy texture. The original recipe calls for cooked chicken breasts and cooked broccoli. I don't have time to cook things before I cook them! So I've always used uncooked chicken and frozen uncooked broccoli. Seems fine to me! :) Cooking time doesn't reflect pre-cooking of the chicken or broccoli... I can't stand cheddar cheese so I substitute mozzarella because that's the only cheese I can eat. I don't like mushrooms either, so I never put them in. Feel free to experiment!"

  • Put broccoli in the bottom of a buttered 9x13 inch pan.
  • Put chicken on top of broccoli.
  • In separate bowl, mix remaining ingredients and pour over broccoli and chicken.
  • Bake one hour at 350 degrees.

  1. This was incredibly easy to make and used items most of us have in the house (even us begginers :D ). My boyfriend was also happy with it too. This is something I will defintely be making again.
     
  2. This tasted good, but some reason turned out very runny. The only difference I made was I used precooked frozen chicken chunks so I didn't have to cook it as long. I wi1l have to experiment to see if I can get this to turn out better for me.
     
  3. This was a great recipe! I too hate cooking before cooking, so I chopped up my partially frozen chicken breasts into small chunks and everything came out fine in the end. I also cut the recipe roughly in half since everytime I make anything in a 9x13 dish, I end up throwing over half of it away a week later. I used two cans of cream soup and maybe 1/8 C of milk. I probably should have used only 1 can and 1/3C milk, or 1 1/2 cans and 1/4 C milk since it did turn out a bit runny. All in all though, I'll probably be making this again since it was so easy, tasted great, and is very versitile in what I can add (or take away) to it. Thanks for posting!

I enjoy baking in my spare time. My coworkers love me because I regularly bring them cookies. I recently started dabbling in baking pies too. I've been told I should bake for a living, but I'm sure it wouldn't be as fun if I HAD to do it all the time! :)
