Ingredients Nutrition

  • 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
  • 4 tablespoons vegetable oil
  • 1 (15 ounce) can chili (chicken or vegetarian chili is best for this dish)
  • 2 cups cooked chicken, chopped
  • 1 12 cups shredded Mexican blend cheese or 1 12 cups monterey jack pepper cheese or 1 12 cups cheddar cheese


  1. Heat vegetable oil on medium high heat, add the Simply Potatoes Diced Potatoes with Onions, and cook according to directions until lightly browned.
  2. Add the chili and chicken, and mix thoroughly. Continue cooking until the mixture is heated through.
  3. Let sit on medium heat without stirring for 2-3 minutes to develop a crust on the bottom.
  4. Sprinkle with shredded cheese and cover pan off heat to melt the cheese OR sprinkle individual servings with shredded cheese.
