Easy Chicken Curry and Couscous

- 1 cup water
- 1 cup couscous
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 large carrots, cut into matchsticks
- 1 cup golden raisin
- 1 tablespoon curry powder
- 2 lbs rotisserie-cooked chicken, remove and shred meat from a store-bought chicken
- 1 cup coconut milk
- 1 pinch salt, to taste
- 1 pinch pepper, to taste
- 3 scallions, thinly sliced
directions
- In a small saucepan, bring water to a boil. Turn off heat. Add couscous, stir once, then cover and let sit until the rest of the recipe is complete.
- In a large skillet, heat oil over medium-high. Add onion, garlic, carrots and raisins and saute until onions are just tender, about 5 minutes.
- Add curry powder and cook, stirring often, for 3 minutes. Add chicken and coconut milk and bring to a simmer, stirring often. Season with salt and pepper.
- Transfer couscous to a large serving bowl and fluff with a fork. Add scallions and toss to combine. Spoon chicken curry over the center of the couscous.

Very easy and good, made as directed altho I missed out the raisins, not a fan, and I added some zucchini, also cut into matchsticks. I used garam masala for the curry powder and was generous with it. I made my couscous much later on, when the curry was about ready to serve. Nice recipe, ideal for weeknights, thank you CaliforniaJan, made for PRMR tag game

I never expected to like this dish. I'm shy about curry and unsure if I even like Indian cuisine, but I decided to give it a try. I didn't have precooked chicken so I sauteed some after the veg was done. Added a lot of garlic, plus garlic powder. I was afraid to even taste the end product but... I LOVED it. Licked the plate clean! Thank you so much, I will be making this again and again!

This was a quick and tasty meal, I used a left over breast and thigh from a 4 1/2 lb chicken. I 3/4 of the can of coconut milk and a little extra curry. It doesn't have the flavor complexity of some curries but for a fast meal it was great. I used Recipe #421073 for the Couscous made with chicken broth. I used Recipe #251371 NOT store bought. Instead of coconut milk I substituted it with milk plus 1 teaspoon of coconut extract by using the kitchen reference directory. My family liked it and there was just a little left over for DD to take to work with her on Monday. Fantastic!!! This is my new favorite curry recipe!!!! I'm going to double the sauce next time, cuz we just couldn't get enough of it. I think I was pretty generous on the curry powder, too. MMMMM! I thought the couscous was a little bland, so next time I'll use broth instead of water, and maybe season it some first. Made for ZWT 4.

Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area.
I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club.
I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun.
I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
Have been a sports fan since childhood and definitely have enjoyed getting to know about hockey since we have a very successful NHL franchise in our area: Go Sharks!
