Easy Chicken Noodle Soup

"I have been making this soup for my son since he was just a toddler. Now, I make it with lots of chicken and noodles because this is a wintertime meal at our house. Use whatever chicken pieces you have on hand, remove the skin and bone (if necessary), chop them up -- and you have done the hardest part of making this delicious soup!!"

  • Chop chicken into bite-sized pieces.
  • Place chicken, parsley, garlic, onion, pepper, and soup base into large dutch oven or stock pot.
  • Brown the chicken mixture over medium heat.
  • If you are not using a non-stick pot, you may need to add a bit of water.
  • Add water, and bring to a boil.
  • Add noodles, and return to a boil.
  • Cook for about 5 minutes until noodles are tender.
  • Reduce heat, cover, and simmer for at least 20 minutes.
  • (I usually turn heat very low, and let it cook for about 1 hour) Ladle into bowls and serve piping hot.
  • Note: I have made this in a crockpot, also.
  • Simply brown the meat and all the spices, transfer to crockpot.
  • Add water and cook on low for about 2 to 3 hours depending on your crockpot.
  • Add noodles, and cook another hour, or until noodles are tender and soup is good and hot.

  2. Super easy for a tired weeknight dinner. I used chicken stock instead of the water and soup base. The onion and garlic really make a flavor difference in this soup.
     
  3. Having had a nasty cold for a few days I wanted some basic chicken noodle soup and this recipe was perfect. I halved the recipe and used thigh meat and homemade noodles (from recipe #27344). Nice and thick and just what I needed to feel better. Thanks Miss Kitty! :)
     
  4. This was nice, and easy - both of which are good, but it also had a nice flavor to it which makes it even better. Great for a good meal - those canned soups definitely can't hold a candle to this one! Thanks for posting.

Hello from beautiful northwestern PA. I am a self-employed gardener, so it is kind of obvious that I love the outdoors. I am a single parent of a great 11 year old son named Ryan, he is my joy. I just turned the big 4-0 this year... and SURVIVED!!! In addition to my son, I am also raising 2 of my nephews (ages 13 & 6)... and my Mother ( she has lived with me since shortly after my Father passed away... and yes, we DO get along!!)We are a unique family, but we're happy(or maybe I mean "crazed"...LOL)! My favorite outside activities are working in the garden, and biking with my boys; favorite inside activity is baking, and trying new recipes out on the "guinea pigs"!! I love cookbooks and gardening books, and have a bunch of them... some old, and obscure, but very useful anyway.My biggest pet peeve is the mistreatment of children...makes my normally controlled red-head temper burn red-hot!! My passion is organic vegetable gardening... there is no place I would be than in my garden, growing safe, healthy food for my family.
