Ingredients Nutrition

  • 354.88 ml all-purpose flour (I have substituted soy and it has worked)
  • 177.44 ml yellow enriched cornmeal
  • 59.14 ml sugar (I use splenda)
  • 9.85 ml baking powder
  • 2.46 ml salt (optional)
  • 236.59 ml milk
  • 59.14 ml vegetable oil
  • 2 eggs, beaten

Directions

  1. Heat oven to 400 degrees.
  2. Grease 8 or 9 in pan.
  3. Combine dry ingredients.
  4. Stir in milk, oil and egg, mixing just until dry ingredients are moistened.
  5. Pour batter into prepared pan.
  6. Bake 20 to 25 minutes or until light golden brown and wooden pick inserted in center comes out clean.
