Easy Cranberry Sauce - Microwave

3-4 cups
ingredients
- 12 ounces cranberries, fresh or frozen
- 1 1⁄4 cups sugar (a little more sugar, if you prefer it sweeter)
- 1⁄2 cup orange juice or 1/2 cup water
- 1 teaspoon grated orange rind
directions
- Combine all ingredients in a 3-qt microsafe bowl; mix well.
- Cover with wax paper.
- Microwave on high for 5 minutes.
- Stir well; recover with wax paper.
- Microwave another 5-7 mins longer until cranberries pop, and sauce has thickened.
- Let stand, covered until cool.
- Transfer to serving bowl and chill for 3-4 hours.

Didn't have OJ so I substituted water with 2 tablespoons of key lime juice and 2 tablespoons of mezcal. Also much less sugar and a pinch of salt and a few grinds of pepper . I couldn't really overtly taste the S&P but then the purpose was just to add depth. Also didn't have the right size bowl so I microwaved on 80 percent power for 99 second bursts to get the needed time without boil over.
