Easy Creamy No-Cream Potato Leek Soup

  • Bring 7 cups of water with 1/2 tsp. salt to a boil.
  • Meanwhile, peel the potatoes and cut into slices about 1/4 inch thick.
  • Wash leeks carefully, and chop into medium sized pieces.
  • When water is boiling, add potatoes and leeks.
  • Turn down heat and simmer, covered for 30 minutes.
  • Reserving 2 to 3 cups of the cooking water, put the remaining contents of the pot into a blender or food processor.
  • Puree until smooth.
  • Add butter and blend until smooth.
  • Return soup to pot and bring to a boil.
  • Add reserved cooking water until soup reaches desired consistency (I like to leave it thick).
  • Season to taste with salt and pepper and serve.
  • Reheats very well.

  2. A friend recently gave me a similar recipe. We have really been loving it! I add about 4 carrots and 2 cans (4 cups) of chicken broth. I cook all the veggies with the broth in the crockpot all day. Then puree and serve. Really good and tastes fattening.
     
  3. Absolutely yummy, filling and easy to throw together. I followed the review suggesting using a couple of carrots and broth and the color is enhanced as well as the nutrional value. I drained the vegetables, reserving all the stock and added cups at a time as it pureed to ensure it wouldn't be over-thin. I'm glad I did because I think I only ended up using 3 or 4 cups to get a thickish soup. A+ for this one, thanks!

  5. This was a great soup, easy to make- I added a few ingredients ( onions, garlic) and cooked in some turkey stock I had left over. My husband loved it.

Tweaks

  1. Six cups of water, add 1 chicken part, i.e. neck and 1 packet of Sazón Goya with achiotte and culantro. Add 1 large clove of garlic, finely minced. Discard chicken part before pureeing soup.
