  1. I've been making lasagna once a week for the past few weeks, since the 6-year-old ds declared himself a lasagna conoisseur last month. I've been making the Pepperoni Lasagna (recipe #43573), as it's his favorite, but it just takes so long. I decided to try to find a lasagna for the crockpot that might work for us. This is pretty darn close. I did throw in a little extra cheese, since I had some that needed to be used up, but I won't do that next time. It was a bit too cheesy for my tastes. I have no idea how many lasagna noodles are in 8 oz, so I just used 9 noodles total. That seemed to work well. The sauce still tasted fairly "ketchupy" to me when I combined the ingredients, so I ended up added about 2 tsp of Italian seasoning and about 1 1/2 tsp of cumin. I would definitely do that again. I also added a can of sliced mushrooms, to put in a little extra veggies. I really think it would do well with some shredded zucchini or something. I doubt it would even be noticeable. As always, I subbed ground turkey for ground beef. The family loved this, though. I want to look through some other recipes and maybe tweak the sauce a bit, but this is an excellent jumping-off point for an easy crockpot lasagna recipe.

  2. This was so yummy! My daughter said it's her new favorite meal! It's quite something to say that for me because usually I fail at crockpot cooking! This was a success and will go in my rotation for "too busy to cook" days. Thanks! I've made it as written and then again with some substitutions. I used jar sauce and added spinach that I chopped in the food processor. I mixed some Monterey Jack cheese with the mozzarella and that turned out well also. Thank you, thank you for a crockpot meal that works for me!

  3. This was my first try at lasagna and it was great! My hubby loved it and was impressed. I used a sm. tub of ricotta instead of the cottage cheese and about 3 c. mozz and it turned out perfect, so yummy for leftovers and so easy toput together. Thank you for posting!

  4. This was amazing, so much better than other lasagna recipes I have tried in the crock pot. I used 1 cup of ricotta cheese instead of the cottage cheese and only 2 cups of mozzarella with 1 cup of sharp cheddar, and the flavor was wonderful. Also, it only took about 3-1/2 hours to cook. Thanks for posting!

  5. I have made it 3 or 4 times and family loves it! I double it but still doesn't take all of 12 oz noodles..... seems ok though.

  2. I defintely will make again! The kids and I loved it! I substituted 1/2 of the ground beef with ground turkey and only used 2 cups of mozzarella cheese to reduce the fat. It still was very flavorful and actully reminds me of the Staufers brand frozen lasagna. This is the best thing that has ever come out of my crock pot! Thank you sooooo much for posting!
