Easy Delicious Hamburger Orzo Soup

"This recipe came from my mom who got it out of an old (1970's)cookbook of hers. I made it one night and just love it. It's perfect on a fall or winter night served with some fresh bread. This recipe makes quite a lot, and we never seem to have much left over."

  • Brown ground beef with onion.
  • Drain.
  • In large pot place meat and onion, water, bouillon, and tomatoes.
  • Bring to a boil; cover and turn heat down to low.
  • Let simmer for 20 minutes.
  • Stir in orzo and frozen veggies, and salt and pepper.
  • Allow to simmer an additional 15-20 minutes or until orzo is done.
  • Serve hot with warm, buttered bread.

  1. This is a keeper for us. It will be a great meal to prepare on a weekday when time and energy are short. I used diced tomatoes with garlic and olive oil which did make it a bit oily but gave it a great flavour. Thanks for sharing this great soup recipe.
     
  2. This was good and easy to make. I followed the recipe as written other then I used 6 cups of beef broth instead of the water and bouillon. I also use about a cup of orzo and 2 cups of mixed veggies. I think it could have used a lot more spices. The longer it sat, the better I think it tasted.
     
  3. This was a very easy to prepare recipe. I served this to a group from work and it was very tasty. I did take the liberty of adding 1/4 tsp of basil, 1/4 tsp of oregano and 1/2 tsp of seasoning salt. I think I also added more orzo then the recipe called for (I just eye balled it). Instead of the vegetable mix, I just added all frozen corn. Thank you for sharing your recipe, I will use it again in the future.
     
  4. We love this soup and it's so easy to make. I've made it before from an old cookbook but couldn't find which book it came from. I was glad to see the recipe posted.
