Easy!!! Easiest Chicken Dinner Ever

ingredients
- 1 lb chicken tenders, raw
- 1 (16 ounce) can chicken broth
- 1 (10 ounce) can rotel
- 1 cup white rice, uncooked
- 1 cup shredded cheddar cheese
- garlic powder
- salt & pepper
directions
- Using a large, deep skillet with a cover pour can of chicken broth and can of rotel into skillet.
- Stir in cup of rice.
- Lay chicken tenders on top of rice and sprinkle with garlic, salt and pepper. Go easy on the pepper if you don't like it too hot because the Rotel has a little kick to it.
- Cover and cook over medium high heat for 20 minutes or until chicken is opaque.
- Remove from heat and sprinkle with the cheese. Stir lightly until cheese melts slightly.
- Serve with a nice salad.

This was fantastic and easy!! made a few alterations that I think really made it better though (I think it would have been rather bland for us otherwise)...added black beans to the rice and used salsa because I only had a very lg can of whole tomatoes. Also added cumin,garlic, and minced jalapeno and onion. Next time I will try to change it up and make it Greek style with chick peas, oregano, lemon and feta!!...served with a cucumber,tomatoe and onion salad.Thanks for a great and SUPEREASY meal.

Absolutely excellent! This has got to be the simplest way of making rice and chicken! I can hardly wait to try out some variations, such as Greek chicken with feta, and lemon mushroom chicken and... oh, the possibilities are endless. This time, I sauteed a green pepper, garlic and half an onion, and added tons of seasoning, including seasoned salt, black pepper, red pepper flakes, garlic powder and red pepper flakes ('cause we like it hot!). Other than that, I pretty much followed the recipe. Thanks for an awesome meal. :)

Green chile is basically in every dish where I'm from, so I had to try this! Very easy to make (and I cook for just one person, which means I'm very happy to have a few days' leftovers). Just enough spice without being too hot to completely cover the flavor. I served mine with a whole grain tortilla, and used brown rice instead of white rice (takes longer to cook, but worth it!). Already thinking about the next time I make it and how I might change it up a little so I don't get too bored; probably throw in some sweet corn next time to see how that mixes up the flavor. Definitely recommend; it's so easy and so delicious!

We used Quorn tenders instead of chicken, because we have vegetarians in our family. I put them on top frozen and they turned out wonderfully. I also substituted fresh diced jalapenos and tomatoes for the Rotel, as we have an abundance of both in the garden. This is a great weeknight meal, quick, easy and tasty, too!

I live in the Dallas, TX area and I'm married to my soulmate. We have a 2 1/2 year old son and I'm expecting another baby in about 4-5 months. I'm mostly a stay at home Mom but I also buy and sell antiques and help my husband out in his business. I work part time in his family's antique store. One of my favorite cookbooks is "Land of Lakes Treasury of Country Cooking". Everything that I have ever made in it comes out great and despite the title many of the dishes are very elegant. Of course being Land of Lakes there is cream and butter and sour cream, etc in many of the recipes so we're not talking diet food. My biggest pet peeve is women who splatter their pee all over the toilet seat. Really ladies, if you're going to stand up and pee like a man at least have the courtesy of lifting up the seat like a man. Many of us i.e. the pregnant, the disabled, the elderly, etc can not squat over the toilet. Give us a break and don't pee all over the seat!
