Easy Enchilada Casserole With Doritos

"I saw this recipe on Good Morning America and it sounded so easy and tasty. And it was! The first time I made it my husband ate almost 1/3 of it in one sitting. Even my toddler son enjoys it. This would be great for those informal group get-togethers also. Add some chiles to give it a bit more zip or a pound of browned ground beef or some chicken for another twist."

ingredients

  • 1 (15 ounce) can chili with beans
  • 2 cups grated sharp cheddar cheese
  • 1 (14 ounce) bag plain Doritos (pick your flavor)
  • 10 -15 ounces enchilada sauce
  • 8 ounces tomato sauce
  • 2 tablespoons diced onions
  • 1 cup sour cream

directions

  • Preheat oven to 375 degrees F.
  • Crumble 2/3 of bag of Doritos into mixing bowl.
  • Mix in the onion, chili, 1 1/2 C cheese, enchilada sauce and tomato sauce.
  • Place into an 8 1/2 x 11-inch casserole dish.
  • Bake for 20 minutes.
  • Remove from oven and spread on sour cream, remaining Doritos and 1/2 C cheese.
  • Bake for 5 minutes or until cheese is melted.
  • Serve.

  3. Very good for a quick week-night meal. I added 1 lb ground beef, cooked with 1 chopped onion. Also added a can of diced chiles for that extra zip, and some chopped green onion in the topping. Real family pleaser!
     
  4. So sorry, my family wasn't impressed at all. I got the recipe and went by the directions exactly. I think it was too much like a frito pie, and my family has grown up eating this dish for for so many years that we tired of it long ago.

Tweaks

  1. My husband eats doritos and always leaves about 1/3 of a bag that doesn't get eaten, so I was looking for a recipe where I could use up these unwanted leftovers. I had taco meat in the freezer instead of the chili so I used 1.5 cups of taco seasoned ground beef and a can of pinto beans. Also had left over spaghetti sauce instead of tomato sauce. Since I only had 1/3 of a bag of chips I continued with the remainder of the recipe using half the ingredients and froze the other half for the next time we only have 1/3 of a bag of doritos. I baked it in a round casserole dish instead of the larger pan and it worked out great PLUS it made an easy recipe even easier. The next time I want to fix it all I need to do is remove the base of this from the freezer, thaw, add the doritos, cheese, and finish with chips and sour cream, and I'm done.
