  • Heat oil in a large pan and add onions. Cook until soft.
  • Add ground beef and cook over medium heat until meat is browned, stirring until meat crumbles; drain and return to skillet.
  • Stir in tomato soup and enchilada sauce. Mix well and bring to a simmer.
  • Spread about 1/4 cup meat mixture on each tortilla; sprinkle tortillas evenly with 1 cup cheese. Roll up, and place, seam side down, in a 9x13-inch baking dish. Pour remaining meat mixture over tortillas.
  • Cover and bake at 350 degrees for 20 minutes.
  • Uncover and sprinkle with remaining cheese. Bake an additional 5 minutes or until cheese melts.
