- 1 lb ground beef
- 1 medium onion, chopped (about 2 cups)
- 1 (1 1/4 ounce) package taco seasoning
- 1 (16 ounce) can refried beans
- 1 (10 3/4 ounce) can condensed cheddar cheese soup
- 10 flour tortillas
- salt and pepper
- 1 (15 ounce) can enchilada sauce (i use red)
- shredded cheddar cheese
directions
- Preheat oven to 350 degrees Fahrenheit.
- Cook the beef and onions in a skillet over medium high heat until well browned. Stir often to separate meat as it cooks; pour off any fat.
- Stir in taco seasoning, refried beans, and cheddar cheese soup.
- Stir until well heated and combined.
- Salt and pepper to taste.
- Divide the beef mixture among the tortillas.
- Roll up the tortillas and place seam side down in a 3-quart shallow baking dish in which you have placed half of the enchilada sauce.
- Pour the remainder of the sauce over the finished enchiladas.
- Cover with the shredded cheddar cheese.
- Bake for 20 minutes or until hot and bubbly.
- Top with your favorite salsa, lettuce, and tomatoes.
