Easy Enchiladas

"Not really sure who to give credit for this recipe. Found it one day going through a mountain of printed ones with nothing but the how to on it. Been making them for some time now. Very tasty and easy."

  • 1 lb ground beef
  • 1 medium onion, chopped (about 2 cups)
  • 1 (1 1/4 ounce) package taco seasoning
  • 1 (16 ounce) can refried beans
  • 1 (10 3/4 ounce) can condensed cheddar cheese soup
  • 10 flour tortillas
  • salt and pepper
  • 1 (15 ounce) can enchilada sauce (i use red)
  • shredded cheddar cheese

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook the beef and onions in a skillet over medium high heat until well browned. Stir often to separate meat as it cooks; pour off any fat.
  • Stir in taco seasoning, refried beans, and cheddar cheese soup.
  • Stir until well heated and combined.
  • Salt and pepper to taste.
  • Divide the beef mixture among the tortillas.
  • Roll up the tortillas and place seam side down in a 3-quart shallow baking dish in which you have placed half of the enchilada sauce.
  • Pour the remainder of the sauce over the finished enchiladas.
  • Cover with the shredded cheddar cheese.
  • Bake for 20 minutes or until hot and bubbly.
  • Top with your favorite salsa, lettuce, and tomatoes.
