Directions

  1. Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 350 for 8 minutes.
  2. Remove foil and bake 5 minutes longer. Cool on a wire rack.
  3. In a small saucepan, combine the sugar, cornstarch, and water until smooth.
  4. Bring to a boil and cook and stir for 2 minutes or until thickened.
  5. Remove from the heat and stir in gelatin until dissolved. Refrigerate 15 to 20 minutes or until slightly cooled.
  6. Meanwhile, arrange strawberries in the crust. Pour gelatin over berries.
  7. Refrigerate until set. Garnish with mint if desired.
