Easy Garlic Zucchini

- 1 zucchini
- 2 garlic cloves, minced
- 1⁄2 teaspoon black pepper
- 1 teaspoon onion salt
- 1 tablespoon olive oil
- 1⁄4 cup water
- 1⁄4 cup dry white wine
- cooking spray (olive oil flavored preferred)
directions
- Wash Zucchini, cut in half horizontally, then cut into 8 lengthwise pieces for each half (16 in total).
- Mix olive oil, onion salt and pepper with zucchini in bowl, covering zucchini completely.
- Spray cooking spray into frying pan. Allow to heat on medium heat for a couple of minutes.
- Add minced garlic. Allow to simmer for less then 30 seconds.
- Add splash of white wine, allow to simmer for another 30 seconds.
- Add 1/4 cup of water, then zucchini.
- Cover and let steam for about 5 -7 minutes.

Since discovering this recipe, my girlfriend and I have made zucchini a staple in our diet; this recipe is so easy and so yummy. We even substituted asparagus and although it wasn't as good as the original, it still turned out very good. Although I love cooking with wine, we don't use it in this recipe.

Mmmm..we like zucchini and this has great flavor. I made exactly as directed which was fine. Next time I'm going to try substituting apple juice for the wine just to try it since we always have apple juice and sometimes the wine just slips away. Also going to try julienne the zucchini since we have that in our freezer from our garden. Thank you!

I really like the concept of this recipe, but the spices were a little intense--even with a doubled amount of zucchini. I'd recommend making it with 2 zucchinis and maybe half the amount of garlic, pepper, and onion salt. Either way, great way to get more vegetables in, and super easy to prepare--thanks for posting it.
