Easy Ham and Potato Skillet

"An easy way to use up left over ham. I made this one up tonight when I had ham in the fridge and needed to come up with something for dinner."

  • Combine yogurt, mustard and cheese in small saucepan.
  • Stir the yogurt mixture over low-medium heat until cheese melts.
  • Slice potatoes into 1 inch pieces.
  • Heat oil in skillet. Add potatoes.
  • Cook for 5-7 minutes.
  • Add ham and green beans to skillet, and heat through.
  • Add yogurt sauce and stir to cover.
