Easy Hash Browns Casserole

"This was one that came from a work pitch-in. It is really easy, and great on a cold day. I sometimes add chopped ham and use it as a main dish. (I'm guessing on the servings.)"

  • 1 (28 ounce) package o'brien frozen potatoes
  • 4 ounces butter (melted)
  • 2 cups shredded cheddar cheese
  • 8 ounces sour cream
  • 1 (10 3/4 ounce) can cream of chicken soup

directions

  • Combine all ingredients and place in a greased 9x13 inch pan.
  • Bake uncovered at 350 degrees for 1 to 1-1/2 hours or until golden brown and bubbly.

  1. I made this for a holiday party for my mom's group and it was a hue hit! I used the o'brien potatoes with peppers and onions to give it a bit more flair!
     
  2. I grabbed my ingredients and piled them on the counter. Then on the back of my bag of (Mr. Dell's) shredded hash browns, there was a VERY similar recipe. So I blended the recipes and it only had a couple of changes. It included a topping of crushed corn flakes and drizzled with 2 Tbs melted butter! It was awesome! It also had better directions and the casserole was prepared in layers. It made more sense. Thanks for posting this! Oh, this was good COMFORT food!   3. A wonderful dish, Shaye. I made it just as you said with one addition: a can of creme of celery soup (in addition to the creme of chicken). We like celery so I didn't figure that it would hurt. We also shared it with the neighbors and their company in from Seattle and they loved it as much as I did. Thank you for a very easy and super recipe. You made me look good!
     
  4. Made this & placed 1/2/ in 8x8 square for my family and the other half in 8x8 for neighbor who recently had surgery. Topped it with cup of cornflake crumbs halfway through. Most delish!! Neighbor even called to rave. I think ore ida use to have this on their package. So similar to the one I lost. Thank you for posting this. As Ore Ida dosent have it anywhere I could find it.
