  • Combine milk, honey and cornstarch in a 2-quart (8-cup) dish.
  • Cook in microwave oven at high power for 6 minutes, stirring after 3 minutes, then after each minute.
  • Beat in eggs and cook 30 seconds more.
  • Remove from oven and add vanilla.
  • Pour into serving dishes or baked pie crust and refrigerate. This recipe is easily doubled.
  • Butterscotch variation: Add 1 Tablespoon molasses to honey. Stir in 2 tablespoons butter after removing from heat. Reduce vanilla to 1 teaspoon.
  • Coconut: Add 1/2 to 1 cup unsweetened, shredded coconut to finished pudding.

  1. I also had the cornstarch lumping problem, which I could have solved by reading the reviews before I made it. It did turn out ok and the texture ended up similar to tapioca pudding. The main reason I marked this down to 3 stars was that it wasn't sweet enough and it could use more vanilla. Next time I make this I'll use the other reviewers' corn starch "trick", add at least a 1/4c. of sugar, 2 tbsp of vanilla (if you have real vanilla extract this might be too much), and a bit of butter or pinch of salt for some flavor contrast.
     
  2. In my case, the cornstarch just lumped together, no matter how much I mixed, so it didn't thicken. In the end, I mixed more cornstarch with a few tbsp of water in a cup and added this mixture to the pudding. It thickened well after that, but had a slightly strange texture, probably because I cooked it a few minutes after adding the eggs so that it would thicken. So next time, I'll mix the starch with a small amount of milk first; also I took LonghornMama's suggestion about adding the eggs. The taste was great and it was easy, so I'll try this again. **Update: I mixed the cornstarch with 1/2 cup of the milk and poured it in. This was MUCH better than before, and the texture was marvelous, like a pudding should be. Thanks!!!
