Easy Homemade Tortillas

- 2 cups flour
- 1 1⁄2 tablespoons baking powder
- 1 tablespoon salt
- 1 tablespoon vegetable oil (or bacon fat)

- Mix dry ingredients well by hand. Add oil and knead together by hand. Add warm water gradually while kneading, until dough starts to stick to itself a bit. If you add too much water, just add a bit more flour to keep soft. Dough should be soft and smooth; not too sticky. Once it is kneaded well, roll into small balls. Line a counter top with plastic wrap. Place ball in middle and press rolling pin against it to flatten. Commence rolling dough into flat circles. In order to achieve the thinnest possible tortilla: Roll it; then flip it over, rotating it clockwise. Roll again. Do this repeatedly until tortilla is at desired thickness and size. I like mine thin, so I do this many times.
- Next, cook rolled tortilla masa on an open skillet. Flip it over and cook on each side for about 30 seconds (or until slight brown spots start to appear). Serve with butter or your favorite cheese!
