Easy Honey Salmon For 2

"An easy dinner for two that won't heat your kitchen up as it cooks very quickly. Easily doubled for 4 if you have a large skillet. Boneless salmon fillets can be substituted for salmon steaks if you hate picking out the bones."

  • 1 cup orange juice, preferably freshly-squeezed
  • 2 teaspoons honey
  • 2 teaspoons freshly grated gingerroot
  • 2 salmon steaks, 1 inch thick (about 1/2 lb total)
  • 1 orange, peeled and sliced thinly

  • In a skillet (that has a lid), place orange juice, honey, and finely grated ginger; stir well to combine and bring to a boil.
  • When boiling, add the salmon steaks, cover, and reduce heat so that the liquid mixture barely bubbles.
  • Cook for 10 minutes, turning salmon after 5 minutes.
  • Meanwhile, with a sharp knife, cut bottom and top off of orange and place on a cutting board; following the curves of the orange, cut off peel; cut into thin slices.
  • Remove salmon to dinner plates, turn heat to high, and cook liquids in pan until reduced by half; pour over salmon.
  • Garnish with orange slices and serve.

  1. Lennie! Terrific recipe! Hubby was so happy with his birthday dinner. I'm glad I bought an extra piece of salmon so we have leftovers. LOVED the sauce. Wouldn't change a thing. Next time I'll use the juicer though instead of squeezing the oranges by hand! THANX!
     
  2. mmmm... yumm yumm yummmm!! I loved this. thank you so much!! I did add the juice of half a lemon to the orange juice to try to give it a lemon kick, but I couldn't taste any. At first I thought the sauce might be a bit too orang-y in flavory but I served it with a lightly spiced couscous, which goes perfect with the orange sauce. also, while cooking, it doesn't make the kitchen smell all fishy. this is a great, quick and healthy recipe that I will make again and again. :D
     
  3. Delicious! Fantastic! I was very distracted while I was cooking and didn't even time it (probably cooked way too long!) and it still turned out great!! I did marinate the salmon in some orange juice, teriyaki marinade and soy sauce for a couple hours...but wow - what a great recipe! Thanks!

  1. DH and I love salmon and are always looking for new ways to prepare it. This is very good. Nice orange sauce and not too sweet. I added some garlic and thinly sliced red onion in step 1. I used salmon fillets instead of the steaks and added 1 tsp of cornstarch to sauce when fish was done. For a nice garnish I used some finely minced parsley. Served this with on top of jasmine rice and a green salad on the side.
