Easy Meatloaf

"Beef & Mushroom Meatloaf Usually about 1/3-1/2 of the volume of "meat" in this dish is actually mushroom to give you an idea of how much I add, I never really measure the mushroom part. I don't like mushrooms so I do this in all of my beef recipes to hide them, I can't tell they are there (your picky eaters wont be able to tell either!) They make the dish taste amazing--the same recipe without them just isn't as good!"

  • Preheat oven to 350 degrees F (175 degrees C).
  • Finely chop mushrooms and saute in a little oil or butter.
  • In a large bowl, combine the beef, mushrooms, egg, milk and bread crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

  2. I never dreamed I would ever give 5 stars to a meatloaf recipe! During the first 40 years of our marriage I made meatloaf so often due to it being an inexpensive meat dish to serve for dinner, that I got to the place where I really didn't like it any more. I picked this recipe because it sounded like it might just be tasty. It is terrific! It's amazing that the sauteed chopped mushrooms added such great flavor. I had a considerable amount of butter and juices left after the mushrooms had carmelized so added the bread crumbs to the juices so that the flavor would be added to the meat as well. WOW! I actually loved this meatloaf so much that I ate a second piece and refrigerated the leftovers! Yes it is that good! The topping was great as well. It was so much better than just using plain ketchup. Made for PAC Spring 2014.
