I never dreamed I would ever give 5 stars to a meatloaf recipe! During the first 40 years of our marriage I made meatloaf so often due to it being an inexpensive meat dish to serve for dinner, that I got to the place where I really didn't like it any more. I picked this recipe because it sounded like it might just be tasty. It is terrific! It's amazing that the sauteed chopped mushrooms added such great flavor. I had a considerable amount of butter and juices left after the mushrooms had carmelized so added the bread crumbs to the juices so that the flavor would be added to the meat as well. WOW! I actually loved this meatloaf so much that I ate a second piece and refrigerated the leftovers! Yes it is that good! The topping was great as well. It was so much better than just using plain ketchup. Made for PAC Spring 2014.
