  1. Cook Orzo until al dente. Drain and place in large bowl. Stir the cooked pasta to cool. Let sit until pasta is room temperature.
  2. Finely dice the shallot and finely chop the parsley.
  3. Zest one of the lemons.
  4. In a separate bowl, combine lemon zest, shallot, parsley, juice of 2-3 lemons, pinch each of salt and pepper.
  5. With a whisk, slowly drizzle olive oil until combination is emulsified. Taste along the way to make sure no one ingredient overpowers any of the others.
  6. Pour mixture over room temperature pasta and mix to fully coat pasta.
  7. Stir in crumbled feta.
  8. Enjoy!
