  • Cook Orzo until al dente. Drain and place in large bowl. Stir the cooked pasta to cool. Let sit until pasta is room temperature.
  • Finely dice the shallot and finely chop the parsley.
  • Zest one of the lemons.
  • In a separate bowl, combine lemon zest, shallot, parsley, juice of 2-3 lemons, pinch each of salt and pepper.
  • With a whisk, slowly drizzle olive oil until combination is emulsified. Taste along the way to make sure no one ingredient overpowers any of the others.
  • Pour mixture over room temperature pasta and mix to fully coat pasta.
  • Stir in crumbled feta.
  • Enjoy!
