  1. Preheat oven to 350°F.
  2. Mix all ingredients in a large bowl, let stand for 5 minutes so oats absorb moisture.
  3. Drop dough by tablespoons (should make 36) onto ungreased baking sheets.
  4. Bake for 15 to 20 minutes.
  5. Let cool for 1 minute on baking sheets, then transfer to wire racks to cool completely.
  6. It is possible to substitute margarine spread with oil or clarified butter.
  7. Feel free to experiment with other extracts. Walnut works well.
