Easy Parmesan Chicken

"This is a recipe I got from Mr. Food a LONG time ago...it is still our favorite! It's changed a little over the years, but the basics make for a great dish. Easy to double or prepare ahead of time. The measurements can be changed to suit your tastes or diet needs - more lemon juice or less oil/butter. It seems like it tastes really good every time we make it! The thinner the chicken breasts, the quicker it gets done! Tastes great served with rice and sauteed mushrooms. My husband loves soy sauce on his... Also, you could use turkey cutlets instead of chicken because they don't need to be flattened."

  • In a small bowl, mix the oil and lemon juice.
  • In a separate bowl, mix the cheese, biscuit mix, and pepper.
  • Dip the chicken in the oil mixture, then coat with the cheese mixture.
  • In a large skillet, heat the butter over medium heat until hot.
  • Fry the chicken until golden and done, about 5-8 minutes per side.

  1. BG, this is just what doc ordered for tonights dinner. Easy and good. Used chicken tenders, as that was on sale and it did fine. Will have again and again. Have you tried baking it?
