Easy Pesto Chicken Penne

"I found this in the "Taste of Home: Cooking for 2" magazine and I've doubled it to serve a family. It's really easy and also really tasty. It also cooks pretty quickly, which is a plus for me!"

  • Heat olive oil in a large skillet over Medium-High heat. The pan needs to be big enough to be big enough to hold the chicken and penne.
  • Cook diced chicken until no longer pink (about 7-10 minutes) and juices run clear. Drain any excess liquids from the pan.
  • Meanwhile in a bowl, combine Parmesan cheese, sour cream and pesto.
  • Pour sauce over chicken and heat until warm. Stir in pasta.
  • Grate additional fresh Parmesan over pasta, if desired. Serve with garlic bread.
  • You can also saute sun-dried tomatoes to stir into the Parmesan mixture, if desired.

  1. Super easy, and really good. I reduced the amount of pesto to 1/4 cup and I added sauteed green onion, mushrooms and spinach, that made it a total meal by itself.

The most defining trait in my life is that I am a mother to two wonderful boys (Tyler, 20 and Zayden, 9). I live in the little college town of Selinsgrove, Pennsylvania. I was lucky enough to be given tickets to see Joe Paterno win his 400th game as the head coach of the football team. I cried like I did when my children were born. The other love of my life is cooking. I didn't really start trying to cook until I was 20, but believe me I have made up for lost time! I absolutely adore baking and I do it whenever I can. I love making Christmas cookies and I have begun hosting our extended families at our home for Thanksgiving and Easter dinners. So far so good.
