  • Boil the ingredients (exluding the peach halves) for 5 minutes.
  • Add peaches and simmer for 5 minutes.
  • Allow fruit to stand in the syrup until cool or overnight.

  2. Wonderful! I will make these again and I liked the convenience of canned peaches. I made tiny changes like a few chili flakes, sugar and water. I used whole spices as I assumed that is what the author meant. I am looking forward to trying them out in a couscous salad or a sandwich or with some chicken. There is enough syrup left over for another small jar of pickles or maybe just use it on hot cereal. I'm also keeping in mind his spectacular sounding eggplant lasagna.

  1. my peaches were in light syrup so the sugar was adjusted with 2-3 tbsp and 1 tbsp of water.

I'm finally posting recipes after years of using this site. I want to be able to access treasured recipes without lugging a ton of books south with me when I move to Lake Chapala in Mexico. Recently retired after 35 years teaching Algebra to 8th graders. I learned to cook at my mother's knee (and Julia Child expanded my vision). She was a 1st generation Swedish-American. Christmas was when we immersed outselves in the Swedish culture and food. Many of the recipes I have recently posted are from her hand-written notes and recipes. My one real regret is that she would never write down the "juice" she used to make pickled herring. Favorite cookbook? I have over 100 or so.
