ingredients
- 3 -4 lbs chuck roast
- 4 medium carrots or 1 lb baby carrots, sliced
- 4 medium potatoes, cubed
- 2 celery ribs, sliced thin (optional)
- 1 envelope dry onion soup mix
- 3 cups water (I use a little flour to make gravy thicker)
directions
- Put roast, potatoes, carrots, and celery in slow cooker.
- Add onion soup mix and water.
- Cover.
- Cook on LOW 6-8 hours.

I used a 3.5lb tip roast, substitued yellow onions cut into wedges, left out the celery. Put the potatos on the bottom, roast over the taters and onions on top. Rubbed the onion soup mix all over the roast before placing in the pot. Very good. My stepdaughter REQUESTED leftovers of this the following evening. That's a first in this house. Thanks!!

This was very delicious and super fast to whip up when you have a ton of things to do in the day. I always wanted to know how to cook pot roast and now I'm not scared to prepare it. I used to be under the impression that it took lots of hard work because it’s so good!!! You can’t go wrong with this recipe it’s cooking for dummies proof! Will be making this again.

Being a single parent, I am always looking for new, tasty meals that I know that my 12 year old will eat. I wasn't sure about trying to make a pot roast since I had never made something like this before, I usually stick to simple easy things that I know I can't mess up. This was easier than most of the things I've attempted in the past and the daughter LOVED it. I couldn't keep from stealing nibbles throughout the day because the smell was amazing! I added a couple quartered onions along with the potatoes and carrots and left the celery out as we tend to enjoy onion over celery. The meat was so tender that I had a hard time keeping it together when I pulled it out of the cooker. Also, instead of flour to thicken the gravy, I used a bit of corn starch, salt and pepper. I will def be making this again in the future. Thank you so much for such an easy meal.
