- 2 -3 russet potatoes
- 1 medium yellow onion
- 2 large eggs
- 2 pinches salt
- 2 teaspoons baking powder
- 1⁄4 cup flour
- 1 cup vegetable oil
directions
- Preheat oven 425.
- Add 1/2 cup of oil to each pan and put in oven for 10min.
- Peel and grate potatoes and onions. Remove moisture from potatoes.
- Mix in eggs, salt, baking powder, flour.
- Drop batter 1/4 cup of batter into the hot oil and press down until tray is full.
- Bake 15-20 min or until golden brown then flip latkes and cook for 10-15 minute.
- Use 2 9x13 pans.
