  • Place butter, onions, celery and leek in pot cook on med/ high heat for 4 minutes.
  • Add carrots, bay leaf and lentils. Pour in stock. Cover and cook for 15 minutes stirring half way through.
  • Remove from heat, cover and let stand for 5 minutes.
  • Remove bay leaf then use immersion blender to purée until smooth,.
