Easy Rice Pudding for a Crowd (Can Be Halved)

""This is the best and easiest rice pudding recipe I have tried. This recipe can also be cut in half. It is creamy, delicious, and doesn't take anything but a periodic stir of the pot. It makes a huge amount and actually feeds more than 18 if you only serve 1/2 cup servings. But everyone that has tried it wants more. My family thinks it's "Da Bomb" - even my son who refuses raisins eats every morsel.""

  • Into a large, heavy-bottomed pan, mix together all ingredients. On medium heat, stir occasionally while mixture comes to a simmer.
  • Continue stirring regularly throughout the process. You don't have to stir constantly, but you can't just walk away for very long either.
  • Once at a simmer turn down heat and continue to stir periodically. Allow to thicken to a creamy consistency (about 25-30 minutes).
  • Don't let it get too thick. It should be only slightly thicker than a hearty cream soup. If it gets much thicker it will be too thick when it cools. Serve as desired, whether hot or cold.

  1. This was easy, tasty, and forgiving. (I over-cooked the rice, but it still came out great!) The full recipe fills a half catering pan, which was exactly the amount I needed. There wasn’t much cleanup either!

Although the kind of cooking I was raised on and most enjoy would best be described as down-home, Southern comfort food, that is not my history in the the least. My mother came from Wyoming rather than the deep south, but she is a wonderful cook and an expert at comfort food.? We always had someone extra at our dinner table as a kid, so I learned how to cook for a crowd.? My husband and two kids tease me about cooking for the 5th regiment, but they all seem to enjoy it. Although I love to cook, I also love to perform in and teach Theatre. That means there are many times when my two passions don't allow enough time for one another.? It's rather difficult to be in the classroom all day teaching theatre, have rehearsals after school, and often be at a theatre by 6:30 for a performance call and still create the kind of meals I truly enjoy cooking. Until I can find a way to marry these two passions, I enjoy collecting and creating recipes and trying them out on my family and friends.
