Directions

  1. In a blender, blend the sauce ingredients until smooth.
  2. Season with salt and pepper to taste.
  3. Just before mixing with the sauce and serving, cook the pasta in a large pot of boiling salted water until JUST firm-tender (do not overcook the pasta) drain and rinse well under cold water; drain well again.
  4. Toss the cooked pasta with the prepared sauce (if the sauce was chilled then warm before mixing with the pasta).
  5. Sprinkle with chopped cashews and serve.
