Easy Sesame Noodle Salad

"I found this in the newspaper several years ago. It is really yummy and very easy and quick! If you like a little bit of spice, I add 1/2 to 3/4 teaspoon of chile oil to the dressing ingredients. When cooking the noodles, I check them often because I add the snow peas and carrots to the same water at the appropriate times. You can also add cubed chicken, beef or pork to make it a meal instead of a side dish. It's great for a pot-luck and always makes a big hit! Enjoy!"

  • Cook noodles, rinse with cold water and spread on a baking sheet or foil to dry. Fill a bowl with ice water. Bring lightly salted water to a boil, cook carrots for 1 minute, add snow peas and cook for 1 more minute. Remove to ice water then put on a towel to dry. Combine noodles and vegetables in a large bowl and toss. Add oil, soy sauce, and sesame seeds as needed. Toss again and chill.

  1. I liked the ease of this salad, but found the dressing needs adjustments for us. Even reducing the sesame oil to 1 Tablespoon left that flavor overpowering. It did mellow as it chilled overnight, but I ended up adding some rice vinegar. I appreciated the tip on drying the veggies on paper towels. Made for Spring Safari 2013 Pick a Chef.
