Easy Sesame Noodle Salad

- 1 lb fresh Chinese noodles or 12 ounces dry pasta
- 4 ounces fresh snow peas
- 4 ounces carrots (match stick size)
- 4 ounces green onions, julienned (3 - 4 large)
- 2 -3 tablespoons sesame oil
- 2 -3 tablespoons low sodium soy sauce
- 2 tablespoons toasted sesame seeds
directions
- Cook noodles, rinse with cold water and spread on a baking sheet or foil to dry. Fill a bowl with ice water. Bring lightly salted water to a boil, cook carrots for 1 minute, add snow peas and cook for 1 more minute. Remove to ice water then put on a towel to dry. Combine noodles and vegetables in a large bowl and toss. Add oil, soy sauce, and sesame seeds as needed. Toss again and chill.

I liked the ease of this salad, but found the dressing needs adjustments for us. Even reducing the sesame oil to 1 Tablespoon left that flavor overpowering. It did mellow as it chilled overnight, but I ended up adding some rice vinegar. I appreciated the tip on drying the veggies on paper towels. Made for Spring Safari 2013 Pick a Chef.
