Easy Taco Casserole

"This is one of my mother-in-law's only recipes. So easy and absolutely yummy. . .but you have to eat it all in one setting as the leftovers don't heat up well. I have subbed lean ground turkey in the past and it is a bit more bland than the beef, so if you take that route, make sure you brown with the turkey with a clove of garlic and a couple tbsp diced onion."

ingredients

  • 1 lb ground beef
  • 0.5 (10 ounce) can enchilada sauce, mild
  • 1 (4 1/2 ounce) can green chilies, chopped
  • 1 (10 1/2 ounce) can fat-free cream of mushroom soup
  • 2 cups sharp cheddar cheese
  • 0.75 (13 ounce) bag Doritos (or any other taco flavored chip, you won't use the entire bag)
  • salt & pepper

directions

  • Brown hamburger, drain off fat and then mix with enchilada sauce, green chilis and soup.
  • Add salt/pepper to taste (I usually only add pepper).
  • Crunch up the Doritos; I usually only crunch up half of the bag to see if that's enough.
  • Layer chips, then hamburger mixture, then cheese and repeat. Make sure to put a few extra chips on the top because they get crisp and yummy.
  • Cook on 350 degrees for about 25 minutes.

  2. I used salsa instead of enchillada sauce, otherwise I made as written. My kids LOVED it and I liked the ease of this dish. Served with a simple salad it was a complete meal. Made for ZWT8, The Fearless Red Dragons.
     
  3. This was quick and easy to whip up and was really good! Made a few alterations; I used cream of chicken soup rather than mushroom and had about 1 cup of leftover white rice that I mixed in. Used recipe#42094 for the sauce and it made more than what the recipe called for, so since I added the rice I added about1/4 cup more sauce so it would not dry out. Made for ZWT8.

  5. Mmmmm very tasty and easy for dinner tonight. I don't know how many chips I used but just spread a thin layer on the bottom of the pan which worked really well.

  2. This was super easy to put together. I used Nacho flavored Doritos and used Fiesta Nacho Cheese soup instead of the mushroom. I also used Mexican Blend cheese because that's what I had! I also crunched up some chips on top and this is a good idea because they keep their crunch unlike the ones inside the casserole. Quick and easy weeknight meal. Prepared and Reviewed this for the Aus/NewZealand Recipe Swap #14.
