Easy, Tangy Apricot-Glazed Pork

"My mom found this simple recipe in a magazine but I don't know which one. It was easy and yummy and my usually picky boys devoured the pork tenderloin I made with it - no leftovers! Using honey-mustard makes the difference."

  • 14 cup all-fruit apricot jam
  • 14 cup honey mustard
  • 2 lbs pork tenderloin (2-1 lb pieces)
  • 14 teaspoon salt
  • 18 teaspoon fresh ground black pepper

  • Heat oven to 400º.
  • Mix the jam and mustard in a small bowl.
  • Rub pork with the salt and pepper.
  • Roast pork for about 8 minutes, then turn and brush the top with the glaze.
  • Roast for another 8 minutes then turn and glaze the top.
  • Pork is done when the meat thermometer reads 160º, or after about 25 total minutes.
