- 1⁄4 cup all-fruit apricot jam
- 1⁄4 cup honey mustard
- 2 lbs pork tenderloin (2-1 lb pieces)
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon fresh ground black pepper
directions
- Heat oven to 400º.
- Mix the jam and mustard in a small bowl.
- Rub pork with the salt and pepper.
- Roast pork for about 8 minutes, then turn and brush the top with the glaze.
- Roast for another 8 minutes then turn and glaze the top.
- Pork is done when the meat thermometer reads 160º, or after about 25 total minutes.
