- Mix sugar, cornstarch, and salt into a saucepan. Gradully stir in milk.
- Bring to a boil over medium heat. Boil 1 minute, sitrring constantly.
- Remove from heat. Stir in butter and vanilla. Chill.

I tried this one as I realised another recipe I had required vanilla pudding, but I didn't have the package kind. I used unsweetened, vanilla Almond Breeze instead of milk and still had to add quite a bit more vanilla to get a vanilla flavour and hide flavour of the cornstarch. With the Almond Breeze the colour was a little weird (grey) and it didn't turn out quite as thick as I had hoped but it did work well in the recipe I needed it for. My kids tried it on it's own and said no thanks though. We don't have pudding very often (read 2 or 3 x a year) so it's not a comparison to packaged product thing, even my 10yo that is vanilla crazy wasn't crazy about this. I will use it again if needed in recipes though.
