Easy Vegetarian Chili on Rice

"This is an easy recipe for anyone to try, I really enjoyed it, a lot of flavor in such a small dish - and of course there is the rice, and I do love rice!!"

  • In large saucepan, heat oil over medium heat. Add onion, carrots, and jalapeno pepper, cook, stirring often, for 6 minutes. Stir in tomatoes, garlic, green peppers, parsley, chili powder, cumin, oregano and salt. Bring to a simmer. Cook, covered for 20 minutes, stirring often.
  • Add beans, and cook for 25 minutes more. Add zucchini, and cook, uncovered, for 5 minutes, stirring occasionally.
  • Meanwhile, cook rice according to package directions. Mound on warm plates, spoon chili on top and sprinkle with cheese.

  1. Not only did you forget to mention tomatoes as an ingredient, you don't say when to add celery. I also added 10 oz corn and drained the beans based on what I saw most common in other recipes.
     
  2. The instructions regarding the tomato and celery need correction. I tried to go without the tomato and added masa harina to thicken it but I'd give my modified version 2.5 stars.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
