Edamame Couscous

- 1⁄2 teaspoon salt
- 1 cup frozen shelled edamame, thawed
- 3⁄4 cup couscous, uncooked
- 1 1⁄2 tablespoons fresh parsley, minced
- 1⁄2 teaspoon lemon rind, grated
- 1 tablespoon fresh lemon juice
- 1⁄8 teaspoon fresh ground black pepper
directions
- Bring 1 cup of water and salt to a boil in a medium saucepan.
- Add the edamame, and cook 30 seconds.
- Stir in the couscous and the remaining ingredients.
- Remove the mixture from the heat, cover it tightly with a lid, and let it stand for 5 minutes.
- Fluff with a fork before serving.
