Edamame Couscous

"I got this recipe in my e-mail from Health magazine. I'm thinking it would make a nice side dish to baked fish."

  • Bring 1 cup of water and salt to a boil in a medium saucepan.
  • Add the edamame, and cook 30 seconds.
  • Stir in the couscous and the remaining ingredients.
  • Remove the mixture from the heat, cover it tightly with a lid, and let it stand for 5 minutes.
  • Fluff with a fork before serving.
