  • Bring 1 1/4 cups water to a boil, stir in rice and season with salt. cover, reduce heat to medium low and simmer 45 minutes or until rice is tender.
  • Bring 2 cups salted water to a boil, add edamame and cook 2 minutes or until tender; drain and set aside.
  • Toss together rice, edamame, cranberries, feta, olives, cilantro, oil, lime juice and red pepper flakes in a large bowl. Season with salt and pepper.

  1. I made this according to recipe and found it an odd mix of flavours. It's simple to make and I like the idea of the brown rice and edamame base. Easy enough to sub in other ingredients to taste.
     
  2. I'm looking at Sister#2's face...such depth and vividness and full of unsaid emotions. I thinks she likes it.

Tweaks

  1. Second time around I put in some chopped artichoke hearts instead of the olives, parsley instead of cilantro, added some frozen cubed butternut squash. I much preferred this combination!
