Directions

  1. Preheat oven to 350.
  2. Generously butter baking dish (es) up to the top.
  3. Brown sausage in frying pan.
  4. Drain.
  5. Saute bell peppers.
  6. Cool.
  7. Beat eggs with mixer until light and frothy.
  8. Add baking powder and flour and beat again.
  9. Stir in remaining ingredients.
  10. Fill dish (es) 2/3 full to prevent spill-over.
  11. Bake 45-50 minutes .
  12. Garnish with sour cream and green onions if desired.
  13. Serve with mild salsa.
