  1. Preheat oven to 375 degrees.
  2. Generously grease a 12 muffin tin.
  3. Sauté the onions, peppers, mushrooms, jalapeño for 5-7 min - stir in spinach at the end
  4. Whisk eggs.
  5. Divide sautéed veggies evenly among muffin tins.
  6. Add goat cheese evenly to tops.
  7. Pour eggs evenly into muffin tins.
  8. Bake at 375 degrees for 25-30 minutes until eggs are lightly browned.
  9. Let cool & remove from muffin tin.
  10. Serve and eat or store in the fridge (I've done up to 5 days and they've been good!) and microwave for 45 seconds before eating.
