- 12 eggs
- 1⁄2 cup mushroom
- 1 green bell pepper
- 1 small yellow onion
- 1 red bell pepper
- 1 jalapeno
- 1 cup spinach
- 6 tablespoons goat cheese
directions
- Preheat oven to 375 degrees.
- Generously grease a 12 muffin tin.
- Sauté the onions, peppers, mushrooms, jalapeño for 5-7 min - stir in spinach at the end
- Whisk eggs.
- Divide sautéed veggies evenly among muffin tins.
- Add goat cheese evenly to tops.
- Pour eggs evenly into muffin tins.
- Bake at 375 degrees for 25-30 minutes until eggs are lightly browned.
- Let cool & remove from muffin tin.
- Serve and eat or store in the fridge (I've done up to 5 days and they've been good!) and microwave for 45 seconds before eating.
