  • Preheat oven to 375 degrees.
  • Generously grease a 12 muffin tin.
  • Sauté the onions, peppers, mushrooms, jalapeño for 5-7 min - stir in spinach at the end
  • Whisk eggs.
  • Divide sautéed veggies evenly among muffin tins.
  • Add goat cheese evenly to tops.
  • Pour eggs evenly into muffin tins.
  • Bake at 375 degrees for 25-30 minutes until eggs are lightly browned.
  • Let cool & remove from muffin tin.
  • Serve and eat or store in the fridge (I've done up to 5 days and they've been good!) and microwave for 45 seconds before eating.
