  • 1 egg, hard-boiled and chopped
  • 12 tablespoon mayonnaise
  • 14 tablespoon sweet relish
  • salt and pepper
  • Dijon mustard (optional)
  • chopped jalapeno, to taste

directions

  • Mix all the ingredients together.
  • Eat alone or between two slices of bread with lettuce.
  • Enjoy!

I boiled up 6 eggs using recipe #228819 and processed them in the food processor and then transferred to a bowl and added 1 tablespoon mayonnaise which was plenty for us and then removed the DH's portion to serve in wholemeal/wholegrain bread rolls with lettuce to take on an outing, and then to the rest of the mix I added 2 teaspoons of a sweet pickle relish and half a finely sliced green chilli (without seeds) and put in 3 other bread rolls with lettuce and we all thoroughly enjoyed them today for lunch, thank you Ninu Dalal for the recipe and Nimz for the recommendation, made for I Recommend tag game.
     
  3. Loved everything about this recipes. The flavor combination was just right for us. I doubled it for DH and I. Used 1/4 tsp of the optional Dijon mustard and 3/4 tsp chopped jalapeno peppers. It was perfect. I'll be making this one again. Thanks so much for sharing. Made for Spring PAC 2013
