  1. Peel and dice eggplant.
  2. Boil until tender.
  3. Drain and mash with other ingredients.
  4. Shape into small cakes and fry in deep fat.
  5. Do ahead and put into aluminum pan to keep warm.
  6. I have to tell you: when i posted this to Zaar, I hadn't tried it. I just fixed it. It's very bland. The only taste that was there was the ketchup! lol I'm not sure what it needs, but either much more salt; an herb; something -- .
