- 2 eggplants
- 2 cups heavy cream
- 2 (7 1/2 ounce) cans minced clams
- 2 tablespoons lemon juice
- 2 cups Ritz crackers
- 4 tablespoons butter
directions
- peel and dice eggplant
- crush ritz crackers
- layer in greased 1 1/2 quart casserole layer of eggplant
- clams milk and lemon juice mixed together
- then cracker crumbs
- do this 2 times
- dot with butter
- bake at 360 for 40 minutes.
