  1. Preheat oven to 300*.
  2. Boil and drain eggplant.
  3. In bowl, mix 1/2 cup cheese and bread.
  4. Spoon into small casserole dish.
  5. Put eggplant over bread mixture.
  6. In small bowl, combine cream, flour, seasoning.
  7. Pour over eggplant and sprinkle other half of cheese on top.
  8. Bake in oven 30 minutes.
  9. Variations: Add other veggies or cooked rice. Try 1/2 cup salsa for extra flavor.
