Directions

  1. Peel and Slice Eggplant.
  2. Broil eggplant on on baking sheet until golden on both sides (15 mins).
  3. Saute shallots & garlic until soft.
  4. Add Tomato & Basil Sauce.
  5. Transfer to baking dish.
  6. Place 1 wedge of cheese and a basil leaf on one end of eggplant slice. Roll up.
  7. Lay seam side down in sauce.
  8. Top with Parmesan.
  9. Bake 10 to 15 minutes.
