  • In a large bowl, mix cottage cheese, horseradish, sour cream and sliced scallions. Set aside.
  • In a separate bowl, mix eggs, milk, salt and pepper.
  • Make 4 medium omelettes in a hot saute pan, adding equal amounts of cottage cheese mixture to each omelette.
  • Fold each omelette in half to hold filling.

  1. Great omelette, loved the horseradish in it (it wasn't too spicy, it was just right). It was a different kind of omelette and really nice. I made these with ricotta, since that is what we prefer, and half the green onions (which was still a lot!). Made a half recipe for 2 with toast, and we were utterly stuffed.
     
  2. This was really good. The horseradish and cottage cheese were so good in this recipe. I pared it down to just one serving (for myself), and the quantities of the cottage cheese, scallion (which just 1 was sufficient for me), sour cream, and horseradish were just right for one omelette. I will make this often, that's for sure! Thanks for sharing your recipe, Mercy. Made for the Best of 2011 tag game.
     
  3. Delicious and easy to make! First I cut the recipe in half and lightly wilted lacinato kale and Russian kale in a little bit of olive oil for about 1 1/2 minutes. Placed the wilted greens on a platter. The mistake I made was thinking I could prepare one big 4-egg omelet when I should have followed the directions and made four individual omelets. The ingredients complemented one another and the horseradish was not too strong-just right. The omelet was arranged over the greens then seasoned with Sicilian sea salt and cracked black pepper. If the omelet hadn't fallen apart I would have taken a photo but I couldn't fold the omelet. <<<--My fault. Disney recipes always give me Happy Feet! Enjoyed for our weekly "Eggs for Thursday's Dinner". Accompanied by Recipe #398774. Thanks!
