  • Preheat oven to 350. Beat eggs till foamy, add oil and sugar gradually, continuing to beat. Stir in zucchini.
  • Stir together the cinnamon, baking soda & powder, salt, and flour.
  • Add dry ingredients slowly to the zucchini mixture, stirring, JUST TILL BLENDED.
  • Pour into greased tube pan, 2 loaf pans, of muffin pans sprayed with oil (or lined with baking cups).
  • Bake bread for 1 hour, muffins for about 20 minutes.
