- 3 eggs
- 1 1⁄3 cups oil
- 2 1⁄2 cups sugar
- 2 cups shredded zucchini
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1⁄4 teaspoon baking powder
- 1 teaspoon salt
- 3 cups flour
directions
- Preheat oven to 350. Beat eggs till foamy, add oil and sugar gradually, continuing to beat. Stir in zucchini.
- Stir together the cinnamon, baking soda & powder, salt, and flour.
- Add dry ingredients slowly to the zucchini mixture, stirring, JUST TILL BLENDED.
- Pour into greased tube pan, 2 loaf pans, of muffin pans sprayed with oil (or lined with baking cups).
- Bake bread for 1 hour, muffins for about 20 minutes.
