Elvis' Favorite Sweet Potato Casserole

directions

  • cook sweet potatoes, peel and mash.
  • In a large mixing bowl, blend sweet potatoes, brown sugar, cinnamon, vanilla and a pinch of salt.
  • Stir in eggs and milk.
  • Pour into a square baking dish.
  • Bake at 375°F for 35 minutes.
  • Remove from oven.
  • Top with pecans and marshmallows and return to oven for 5 minutes or until marshmallows are puffed and browned.

  3. Wow! Made this for a dinner party and it was a huge hit!!!! They were all asking for the recipe! So sad I didn't have any leftovers!! I'm from the South and have tried lots of great sweet potato casseroles, but this was the best!!!
     
  4. This came out very bland, so I had to increase the cinnamon and add some nutmeg. It was also very soupy, and I didn't even add all the milk. Otherwise I followed the recipe exactly, although I didn't add the butter (the recipe didn't state what it was for anyway) because I didn't want the potatoes even more soupy. Our family was disappointed.
     
  5. Excellent!! Made this for Thanksgiving and everyone enjoyed it. Omitted the pecans. Much lighter and fluffier than other casseroles I've tried, and not too sweet. Just right! Thanks for sharing the recipe!

Tweaks

  1. This was yum yum and then some! But I must confess I changed it a little bit. My husband wanted sweet potato chunks instead of puree so I boiled them until just tender, let them cool and sliced them up into medium cubes. The problem then was the eggs. I did not want scrambled eggs so I just left them out but I added everything else according to the recipe. It turned out wonderful and it was the first of the Thanksgiving sides to disappear. Next year, though--maybe I won't wait that long--I want to try the recipe just as it is. Thanks for sharing!
